In order to provide available thermophysical property parameters for fresh water fish processing,the unfreazable water,initial freezing point,apparent specific heat,enthalpy of silver carp meat and effects of NaCl content on thermophysical properties of silver carp meat during phase transition were studied by differential scanning calorimetry(DSC).
为提供淡水鱼加工的热特性参数,以鲢鱼肉为对象,采用差示扫描量热仪(DSC),研究鲢鱼肉在相变区间的不可冻结含水率、冰点、表观比热和热焓,以及食盐添加量对相变区间鲢肉热特性的影响。

In order to provide theoretical supports for storage process of crisped grass crap meat, effects of NaCl and sucrose-NaCl mixture on thermo-physical properties including freezing point, apparent specific heat, and enthalpy of crisped grass crap meat were determined by differential scanning calorimetry (DSC) at low temperature phase transition area.

Then,applied to typical underwater laser imaging system,a method was proposed to calculate the maximum detecting distance according to the apparent contrast.

Specific heat
比热(speeifie heat) 使单位质量的物质温度升高一度所需要的热量，与使相同质量的参考物质温度升高一度所需要的热量之比，称为该物质的比热。二者的测定都是在某一参考温度下，并且几乎在所有的情形都是在恒容或恒压下进行的。通常水就是参考物质。因为水的热容量差不多为1，物质的比热数值就几乎等于它的热容量。尽管比热的定义往往是不同的，但比热是一个无单位的比率，这里所定义的比热就是这样。为确切起见，建议用热容量而不用比热来讨论热力学问题。此外，最好用电学参量来规定热量单位。参阅“热容量”(heat eapaeity)、“固体的比热”(speeifiC heatof solids)各条。 [韦伯(H.C.Weber)撰]
