主料:荞麦面、面粉
辅料:羊肉末、西葫芦
调料:盐、料酒、鸡精、葱姜末、鸡蛋液、香油、干淀粉
做法:
1、烫面:将荞麦面、面粉充分混合后放在盆里,放入九成热的开水用筷子搅拌好再揉成面团,稍加冷水揉软用湿布盖好,饧20分钟;
2、取一器皿放入羊肉末、葱姜末、盐、料酒、香油拌匀,西葫芦洗净去籽瓤,用擦床擦成丝,用盐稍腌制一会挤去水分,放入羊肉馅中加入适量鸡精拌匀成馅待用;
3、将干淀粉放入面板上为泊面,将面团揪成小剂,按扁后擀成皮,包入羊肉西葫芦馅成饺子,放到蒸锅中用旺火蒸15分钟即可。
特点:皮柔韧,馅鲜美。
天天提示:荞麦味甘、性凉,有清热解毒,益气宽肠之功效,但荞麦不宜久食,对脾胃虚寒者忌食,更不可与猪肉及白矾同食。
