性质:又名1,2-苯并芘(1,2-benzopyrene),常温下是黄色结晶,几乎不溶于水,一旦污染食物,冷水、热水、碱水都无法洗掉,可溶于苯、甲苯、环己烷,稍溶于乙醇、甲醇。在环境中广泛存在,有极强的致癌性。食物熏烤时会产生苯并[a]芘,一般烤肉中含量为0.17-0.63微克每千克;城市大气中冬季较高为0.6-104微克每千立方米。主要来自汽车排放,香烟烟雾中也存在。常作为环境中致癌多环芳烃污染的指标物质。
