用醋酸和乙醇酯化制醋酸乙酯是开发较早,工艺成熟,且为目前主要采用的方法。反应在酸催化剂(如硫酸)存在下进行液相酯化,分为间歇法和连续法。间歇法使用釜式反应器,连续法则用塔式反应器。因酯化是可逆反应,为提高酯的产率,要采用过量的乙醇,使醋酸完全反应。粗醋酸乙酯经中和、蒸馏后,可得纯度98%以上的产品,收率按醋酸计为99%。
由乙醛缩合制醋酸乙酯时,反应以三乙氧基铝为催化剂,加入氯化锌、氯化汞或氯化铝作助催化剂。醋酸乙酯的产率以乙醛计为91.2%。此外,工业上由丁烷氧化制醋酸时也副产醋酸乙酯。
