性质:淡黄色至琥珀色油状粘稠液体。相对密度(25/4℃)1.06-1.10,折光率1.4756。粘度0.4-0.7Pa·s(25℃),闪点10℃。易溶于水,溶于乙醇、植物油、乙酸乙酯、甲醇、甲苯不溶于矿物油。低温时成胶状,受热后复原。有特臭,味微苦。

制备方法:将山梨醇加热减压蒸馏,收集60-85℃(8.0kPa)蒸出水分达到计算量,趁热出料,得失水山梨醇。将其与油酸酯化,得斯盘80。然后,将斯盘80与环氧乙烷在碱催化下缩聚,得到吐温80。

用途:用作乳化剂、润湿剂,渗透剂、扩散剂等,也用作绵纶和粘胶帘子张油剂的组分。在聚氨酯泡沫塑料生产中用作乳化剂。食品工业用作冰淇淋乳化剂,用量为0.1%黄油,一般油中加量1%左右。
