茶色素是从红茶中提取的一类水溶性酚性色素。
roberts e.a.h.(1959)将其分为茶黄素(theaflavins tfs)和茶红
素(thearubigins trs)，并提出了tf的分子式与结构式，阐述了制茶发酵中茶色素形成途径等，这些至今仍是茶色素化
学基础。四十年来，已有一些学者对roberts的茶色素及其形成机理进行了补充和修正，如潼野，brown,robertson a对
茶色素的前导物，中间体与产物；茶色素形成中ppo与pod的作用及其生化机制等等［1］都有补充与修正。现已明晰：茶红
素是茶色素的主体组分，其含量占茶色素总量85%以上，是一类酚性氧化聚合物的异质类群，从中已检出儿茶素二聚物，低
聚合物和少量高聚合体。本文对茶色素形成的生化反应，茶色素的组成与结构，茶色素形成生化机制等进行了讨论，指出
tfs仅是繁杂的儿茶素二聚物中一类性质较特异的茶骈酚酮的衍生物。它不是茶红素形成的必需的中间体，茶红素是以儿
茶素二聚物和儿茶素低聚合物为主体。茶色素的前导物中除儿茶素外还有原花色素，黄酮醇及其甙和酚酸等酚性物质，甚至
还有氨基酸、蛋白质等非酚性物质。
