原料配方 菌丝培养清液3升 甜菜浆果胶15克 砂糖450克 柠檬酸15克 苹果酸3克
制作方法
1.制菌丝培养清液:培养基配比为葡萄糖2%、糖蜜2%、 脱脂奶粉2%、乳酸1.5%,ph值4.5。500毫升三角瓶50个,每个装100毫升培养基,加塞后于120℃温度灭菌30分钟,冷却后分别接种食用菌菌丝,又于25℃振荡培养14天,然后加热到100℃,再经冷却,用离心机分离,除掉菌丝,得3升清液。
2.制甜菜浆果胶:取700克粉碎的干甜菜浆料,加10升水,于120℃温度灭菌60分钟,离心机分离,滤液浓缩使其固形物达到6.7%。继之进行冷冻干燥,再把干燥物溶在热水里,用活性炭脱色,过滤后用渗析器加水透析7天,加酒精使其浓度达到50%,产生沉淀后,用离心机分离,固形物再用酒精洗脱,干燥后得甜菜浆果胶166克。
3.清液3升加甜菜浆果胶15克,加热溶解之,然后加450克砂糖,15克柠檬酸和3克苹果酸,配成食用菌线体饮料。
产品特点 具有食用菌的特有风味,灌瓶后进行巴氏灭菌,即使贮存30天也不会产生沉淀。
