【原料】
主料 精白面粉400克,净猪夹心肉250克,冻皮汤400克。调料 熟大油25克,白糖、盐各10克。酱油12克,味精5克,胡椒粉1克,虾子3克,香油3克,葱、姜汁水120克,鸡汤适量。
【制作过程】
(1) 制馅心。①将肉去皮、骨、洗净,剁成肉末,加入味精、酱油、糖、盐、胡椒粉、葱、姜汁,一面搅和,随之慢慢加入清水,不断地搅动起劲。最后放入香油、熟大油、拌透即成馅心。 ②将洗净、刮净毛污的肉皮,放入开水炒勺中过水后捞出,再放入勺内,加入鸡汤烧至汁浓后,筛滤去渣,随之加入盐、胡椒粉和虾子,熬煮一会后,撇去浮沫,将皮汤倒入钵内。 ③冷却后即成冻皮汤,取其400克,切成黄豆粒大小的肉末拌和。 (2) 制包皮。将面粉加入凉水拌和后,稍醒一下,然后再揉成面团,搓成细长条,揪成160个剂子,用擀面杖擀成圆形皮子。 (3) 包入馅心。将馅包入皮内后,捏成鲫鱼口形的包子,上屉蒸5分钟左右见包子臌汽,汤满口湿润时,取出即成。
