又称儿茶精。为黄烷醇的衍生物,分子式C15H14O6。儿茶素最初由儿茶中提出。为无色结晶形固体;能溶于水;其水溶液受热或在无机酸存在下,容易聚合(见聚合反应)成无定形鞣质。儿茶素作为鞣质的前体,广泛分布于植物中,且常与相对应的黄酮类化合物共存。儿茶素的分子中有两个手性(见手征性)碳原子,故有四种立体异构体:(+)-儿茶素、(-)-儿茶素、(+)-表儿茶素、(-)-表儿茶素。
儿茶素类中其他化合物如没食子儿茶素(又称茶儿茶素)等也都有类似的立体异构体,它们在热水溶液中容易发生差向异构化作用或变旋作用(见旋光异构)而相互转化。儿茶素类在植物体中可游离存在,或与糖(见碳水化合物)结合成苷或与有机酸缩合(见缩合反应)为酯类而存在。例如,由茶叶中曾分离出儿茶素及其酯类衍生物,主要有(-)-表儿茶素、(-)-表没食子儿茶素、(-)-表儿茶素-3-没食子酸酯、(-)-表没食子儿茶素-3-没食子酸酯等。这些化合物分子小,溶于水成真溶液,在溶液中可被氧化而自身缩合为不同程度的缩合产物,从水溶性鞣质到水不溶性鞣红。当用开水沏绿茶时,开始茶水为黄绿色澄清液,放置过夜后,转为黄棕色混浊的溶液,即鞣质前体变为缩合鞣质所致。
