分子式C30H48O3。一种萜，属 α－树脂醇型三萜类化合物。熊果酸在自然界广泛存在,存在于熊果和Vaccinium macrocarpon Ait等果实提取物中。在多种水果如苹果、梨等皮的蜡质中也含有它。熊果酸从绝对乙醇中结晶时形成发光的棱柱体；熔点284°C，比旋光度[α]崜+72.4°(甲醇)；不溶于水，溶于冰醋酸，微溶于乙醇。熊果酸可用做食物的乳化剂。
