分子式C8H8O3,分子量152.14,学名3-甲氧基-4-羟基苯甲醛,又称香兰素,亦称香茅醛。是香草豆的香味成分。存在于甜菜、香草豆、安息香胶、秘鲁香脂、妥卢香脂等中。是一种重要的香料。白色针状结晶。熔点80~81℃、沸点285℃。密度为1.056g/cm3。微溶于冷水、溶于热水,溶于乙醇、乙醚、氯仿、二硫化碳、冰醋酸等。其水溶液遇三氯化铁呈蓝紫色。用作定香剂、协调剂和变调剂,广泛用于化妆香精;也是饮料和食品的增香剂。可从香茅油中提取,或由异丁子香酚经乙酰化和氧化来制备。
