带皮五花猪肉肋肉1块（约400克），糯米锅巴50克，虾仁 50克，熟火腿末10克，菜叶末 2克，黑芝麻2克，鸡蛋 1个，韭黄 250克，干淀粉 3克，湿淀粉5克，味精 11/2克，酱油 10克，绵白糖 5克，精盐 4克，绍酒6克，香醋 1克，熟猪油 500克（约耗75克），肉清汤 200克。
【制作过程】
（1）将五花肉洗净，放入沸水锅内，煮至九成熟，捞起趁热撕去皮，放在盘中。将鸡蛋黄放在碗内，加干淀粉1克搅匀，涂在肉背上待炸。（2）将糯米锅巴切成菱形小块12块，将虾仁斩茸放在碗内，加干淀粉，鸡蛋清，味精，精盐，绍酒镶在锅巴四边，再分别点上火腿，菜叶末及黑芝麻。（3）将韭黄切成约3厘米长的段，炒锅上火，放熟猪油15克烧热，下韭黄略炒，放酱油5克，白糖1克，炒熟起锅，倒入菜盘中间垫底。（4）炒锅再上火，放入全部熟猪油，烧至八成热，下虾仁锅巴，炸脆捞起，放菜盘两头，再%
