淡黄色至黄绿色透明粘稠液体，具有特殊的微香气。密度0.91g／cm3。凝固点-6℃。不溶于水。微溶于乙醇。溶于乙醚、氯仿。不干性植物油。主要成分为三油酸甘油脂，其次为软脂酸和亚油酸的甘油酯。露置空气中会产酸败。
生产方法：主要采用压榨精练法。以橄榄的果仁为原料，先经清洗、轧坯、蒸炒，然后进行压榨，再经精炼而得。
用途：植物性不干性油。主要用作乳剂类护肤化妆品的原料，对皮肤有良好的渗透性，较白油等有更好的护肤性能，特别适宜用于水／油类乳剂。另外，还用于防晒油、按摩膏等化妆品，也是发油和唇膏等的基质原料。
