内江珍珠粉耙(四川)
珍珠粉耙是四川内江的传统著名甜食。
原料配方 大米1.05千克 黄豆500克 面粉150克 红糖500克 糯米600克 猪油150克 红、
绿、黄色素、菜油各少许
制作方法 1.将全部大米和糯米(450克)洗净。换清水(淹没米)浸泡15分钟，倒入竹筛沥
干水分，舂(或磨)成细粉；将剩下的150克糯米洗净，放入笼屉蒸成米饭，蒸时要边蒸边洒
水三次，这样才能熟透松散。蒸好后倒在面板上冷透，分成三份，分别用红、绿、黄色素染
成红米、绿米、黄米。
2.将黄豆洗净，放入净干燥炒熟后，舂(或磨)成细粉；将面粉也炒熟；将红糖研细。然
后将黄豆粉、面粉、红糖、连同猪油拌和成豆沙糖馅。
3.用舂细的米粉100克倒入盛有300克开水的锅中搅成稀糊，再将剩余的1.4千克米粉倒
在瓦钵内，中间掏个坑，将上面搅好的稀糊放入，同时加入150克清水，用手和匀再揉成米
团。
4.两手抹上少许熟菜油，将米团搓成长条，再揪成30个小剂子，一个个用手按扁，每个
裹适量豆沙糖馅后封口，再按成簸盖形，即成粉耙生坯，在每个粉耙坯上粘些红、绿、黄各
色熟糯米，上笼用大火熟即成。
产品特点 晶莹发亮，耙质绵软，香甜可口。
