木糖 xylose 一种单糖。分子式C4H9O4CHO。木糖是木聚糖的一个组分,木聚糖广泛存在于植物中。木糖也存在于动物肝素、软骨素和糖蛋白中,它是某些糖蛋白中糖链与丝氨酸(或苏氨酸)的连接单位。在自然界中尚未发现游离状态的木糖。a-D-木糖为细针状晶体,味甜;熔点为153~154℃,有变旋现象,比旋光度+92°→+18.6°(16小时 ,水 ,C=10)。a-L-木糖为针状或柱状结晶;熔点141~143℃,19°。 a-L-木糖一般由六碳糖经化学降解 a,或者由L-阿拉伯糖经差向异构化反应制得 。玉米芯 、花生壳等农产品废料用8%硫酸煮沸,很容易析离α-D-木糖 。木糖是生产木糖醇的原料,一般不能被通常的酵母发酵,而多种细菌能食用木糖生成许多重要产物,如乳酸和乙酸。 |
