毛蟹2只（约500克），大葱15克，生姜10克，醋50克，大蒜5克，酱油75克，花椒3克，精盐3克，白糖15克，味精2克，芝麻油5克
【制作过程】
1、 将2只大螃蟹洗净，用绳线捆牢，腹朝上装盘，加少许花椒、葱、姜，入笼，用旺火蒸1小时左右，取出，解开绳线，剥掉肚脐、盖壳，挖出蟹腿，切去爪尖。 2、 再将蟹身由中间向左右二分之一处各斜一刀，即成3大块，每块再顺切成4小块，另一只蟹也是同样切法。 3、 装盘时，把蟹腿排在是间，大腿在前，小腿在后，蟹块摆在小腿上和两侧，再加上蟹黄。 4、 大葱、生姜、大蒜去皮，洗净，均切成碎末，放入瓷碗中，加醋、酱油、味精、白糖和芝麻油，调成汁，浇在蟹块上，即可
