又称α－甲基丙酸。为分子中含有四个碳原子的支链型饱和羧酸,分子式(CH3)2CHCOOH。以游离状态存在于稻谷、豆类和山金车花的根中，其乙酯存在于巴豆油中。 异丁酸为无色稠厚的液体, 有刺激性气味；熔点－46.1°C,沸点153.2°C, 相对密度0.9681(20/4°C)；易溶于水和一般有机溶剂中。异丁酸钙在水中的溶解情况与丁酸钙不同，它在热水中的溶解度比冷水中大。异丁酸能发生脂肪酸的一般反应。因其分子中含有一个三级碳原子，经碱性高锰酸钾氧化，可形成α－羟基酸。
异丁酸可以通过氧化异丁醛来制取。异丁醛是丙烯在合成丁醛过程中的另一主要产物（见丁酸）。异丁酸也可通过异丁腈的碱性水解或甲基丙烯酸的氢化来制备。
异丁酸没有丁酸重要。异丁酸可除去汽油中具有恶臭的硫化物。其酯可用作合成香精。例如，异丁酸甲酯似杏香，丙酯似菠萝香，异戊酯似香蕉香。
